Would you fancy a cake where the taste of orange and cocoa meet? If your answer is yes, then this cake is just for you. This delicious cake is very quick and easy to make.
If you have Coeliac Disease and you want to have a gluten-free cake, you can always use gluten-free flour to prepare your cake. Make sure to adjust the amount of flour you’ll use to obtain the cake batter.
This orange and chocolate cake can also be vegan. Eggs can also be substituted with chia eggs. One chia egg can be prepared with mixing 1 tbsp chia seeds + 3 tbsp drinking water. Wait for a few minutes and the mixture will take a gel texture to substitute an egg.
- 1 orange – zest and juice
- 2 eggs
- 1 cup (6 tbsp) brown sugar
- 1/2 cup (around 120 ml) sunflower oil
- 1 tbsp vanilla essence
- 1 tsp baking powder
- 2 cups + 1tbsp flour of your choice (I used white flour)
- 1 tbsp cocoa powder
Preheat your oven to 175°C.
Firstly, grate your orange peel. Once done with grating, squeeze the orange for its juice.
Secondly, whisk the eggs with sugar. Add the remaining wet ingredients; sunflower oil, orange juice and vanilla essence. Mix them well. Then, combine the dry ingredients; orange zest, flour and baking powder. This mixture is then combined with the wet ingredients which will give us the cake batter.
Pour this cake batter to your cake tray. However, make sure to save some batter as cocoa powder will be added to some of the batter. You may want to cover the loaf tin with baking paper as I did. Hence, it will be easier to remove the cake from the loaf tin.
Remember your saved cake batter? Add cocoa powder and mix well. Then, pour the cocoa powder added batter in the loaf tin gently, mixing it with the main cake batter.
Bake for around 35-40 minutes. Once you remove it from the oven, let it cool for 20-30 minutes.
