Actually, this recipe is not exactly a frittata. I didn’t know what to name it as it is something unique. You can think of this as a crustless quiche but with oats! So, more fulfilling and delicious.
You can enjoy this recipe for breakfast or as a snack with tea/coffee.
It can be kept in the fridge for 3 days and portions can be reheated in the oven.

Ingredients:
- 3 leeks
- 3 eggs
- 1 clove of garlic
- 2 tbsp yoghourt
- 1 block of feta cheese
- 2 cups of oat flour or rolled oats
- 1 tsp baking powder
- Olive oil
- Spices – salt, turmeric, pepper, curry powder and ground chilli
- Sesame seeds and black cumin seeds – to sprinkle
Method:
Pre-heat your oven to 175°C.
Start by chopping of the leeks. Then, sauté the chopped leeks with olive oil and salt.
Then combine the rest of the ingredients and mix very well.
Transfer the mixture to a tray. Then sprinkle with sesame seeds and black cumin seeds.
Bake for 30-40 minutes.
