Hello everyone! As we are in July, and finally the weather is getter summery in Dublin, here is a fresh summer recipe for you, which I love!
It is very easy to make and nutritious, with budget friendly ingredients. I bet it will be your favourite too!

Ingredients:
- Quinoa
- A medium-sized onion – finely chopped
- 1 tsp tomato paste
- Olive oil
- Cucumber
- Parsley
- Spring onions
- Tomatoes
- Lemon juice
- Pepper
- Salt
Equipment:

Method:
Boil some quinoa with a dash of olive oil for extra puffiness and set aside to cool down.
Chop the onion and fry it with olive oil, then add a tea spoon of tomato paste.
Combine the cooked quinoa with fried onion. Mix well.
Start chopping cucumber, parsley, spring onions and tomatoes.
Assemble everything, add lemon juice, pepper and salt.
Enjoy!
